2 cups whole grain oat flour
1 ¼ teaspoons baking powde
r½ teaspoon baking soda
½ teaspoon ground cinnamon
1/8 teaspoon salt
2 slightly beaten egg whites
1 cup mashed banana
¾ cup sugar
¼ cup canola oil
Nonstick cooking spray
Preparations
In a medium mixing bowl stir together flour, baking powder, baking soda, cinnamon and salt. In a blender, blend until smooth, egg whites, banana, sugar and oil. Stir banana mixture into flour mixture just until moistened. Spray 8X4X2-inch loaf pan with nonstick cooking spray. Spread batter in prepared ban. Bake in 350ºF oven for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool bread in pan for 10 minutes. Remove from pan and cool thoroughly on a wire rack. For easier slicing, wrap bread in plastic wrap and store overnight. Delicious served with glass of cold milk.
