Nutrition Services Wins National Award

   St. Peter’s Nutrition Services Chef Karea Anderson and Director of Nutrition Services Deborah Jones (pictured left to right) were named silver medalists in the Association for Healthcare Foodservice Culinary Competition in Austin, Texas, on Monday, June 7.

   Created was Anderson’s original dish of Chicken and Bacon Empanadas in Sweet Potato Pastry with Grilled Corn Salsa, Avocado Crema and Pomegranate Cherry Reduction in the 75-minute timed event.  The cast iron grill pan and Dutch ovens definitely made it clear the duo were ready to create a rustic delicious entree that was less than 600 calories, less than 30% calories from fat and less than 100 mg. sodium.  The entree will be available at a reservation-only event this later this summer at St. Peter’s Continental Cafe.
